The Holiday Bikini – How to Make It

WHere is a simplified version of a beverage from a new menu. This is a batch prepared mix that's packed with flavours associated with Christmas time, which makes it excellent for hosting a holiday party. Reserve the remaining cordial you can use for breakfast cocktails, sweets, or to make another batch of the drink.

To prepare the Syrup: Place every items in a pan, heat until it reaches a simmer, mixing so the sugar melts. Then, remove from the heat allowing it to reach room temperature completely. Pour into a clean bottle, cap it and refrigerate it in the fridge, it can be stored for around one month.

To make Batch Mix: Pour all the spirits and syrup into one large bottle, leave to sit for one hour, then pass it through , ideally through muslin, so it's fully clarified.

When ready to serve: Measure 85ml of your batch mix into your cocktail shaker packed with ice, and stir carefully for a minute to chill. Filter to a frosted cocktail glass or similar, decorate with some cranberries and finish by giving it a brief mist with the mandarin essence above the glass.
